Fly, Spanish Fly
Friday, 14 January 2011 11:35

Eateraz.com got the inside scoop on Spanish Fly. Spanish Fly will take the place of Drift, which you'll be sure to forget by morning.  Enjoy!

We can’t tell you how many times we’ve been sitting at the bar, three beers in, and thought: “Man, I could really go for a swim.” Soon, a quick dip will be steps away thanks to the guys behind Drift (plus a couple new partners).

Tiki paradise, Drift Lounge in Scottsdale, closed not too long ago for a total overhaul that called for an opening up of the old brick space … and by opening up, we mean pretty much the entire north wall—which will connect out to the city’s first bar/pool. Now, folks who usually dig the hotel pool scene will have an option that isn’t protected by room keys. Although, expect this pool to operate much the same way—cabana reservations, likely cover charges, and throngs of beautiful people.

But the good news is, the guys behind it will make sure it’s got soul, like everything they do. The group of Andrew Nam, Bryan Chittenden, and Greg Donnally, who brought you the original Drift, Stingray Sushi, Jimmy Woo’s, and Geisha-A-Go-Go, are creating the new pool bar, called Spanish Fly, to operate like nothing else in town. When we stopped by today, new partner Luke Kory (formerly with Alliance Beverage, and whose brother, Jake, is also a co-owner) was checking on progress. Check out the quick interview by clicking the pic above.

Off camera, Chef Nam told us to expect a menu of easy-to-eat fare—tacos, sushi rolls, and basic poolside apps. They don’t expect you to go to Spanish Fly for a dining experience, but you’ll definitely have good food to nosh on while playing hooky or lounging in a cabana, watching the flat screens on a Sunday afternoon. Also off camera, Donnolly was hammering away with some workers on the roof, trying like hell to keep the group’s Spanish Fly story under wraps. Alright, we can respect privacy sometimes.

It’ll be kinda trippy to drive down 75th Street and see a pool just steps from the curb, but we must admit, it makes sense. Can’t believe nobody’s done this before. Kudos to the group for getting it off the ground.
